There are chefs who spend a lifetime refining a single cuisine, and there are others whose cooking is shaped by the places they have lived, the kitchens they have worked in and the people they have cooked alongside.

For the next edition of Wee Hours, we welcome British chef Connor Gibson, whose journey has taken him through professional kitchens in London, Amsterdam and Marseille before leading him to Singapore, where he was most recently Head Chef at No Sleep Club. Classically trained in French and Italian cooking, his food continues to evolve through travel and the many cultures that now surround his work. More recently, Connor has chosen the format of pop ups as a way of contributing to Singapore's food culture, creating opportunities for people to gather around a shared table.

For this evening, Connor turns his attention to the Italian family meal. The meal unfolds in the way Italian family meals often do, a succession of courses.

Each ticket includes the full menu for the evening. A selection of wines, alongside non alcoholic beverages, will be available to order by the glass or by the bottle throughout the meal.
