A night out in Spain unfolds across multiple stops, moving from one bar to the next with an unhurried rhythm. The bar anchors daily life, coffee in the morning, small plates at midday, drinks into the evening. It holds a steady sense of familiarity, where people gather, return, and remain.
This sensibility is shaped, in part, by the land. Positioned between the Mediterranean and the Atlantic, Spain draws from a broad palette of ingredients and climates, giving rise to distinct regional expressions from Paella along the coast to Jamón Ibérico further inland. Its history, too, is layered, Roman, Moorish, and outward-looking, each leaving traces in what is grown, cooked, and shared. What remains constant is a way of eating that resists urgency. Food is appreciated slowly, in company, shaped as much by conversation as by taste.
In much the same way, creative work rarely follows a straight line. It gathers influence and inspiration from all directions. This is something we return to often in our own approach, and something we recognised in Shermaine Sim. Working across mediums, her practice moves between food, space, and community. With a foundation shaped by her time as the first generation team at Cloudstreet and Analogue Initiative, she now develops menus, curates gatherings, and builds experiences with a independent voice, contributing to the local landscape at large whilst tattooing on the sidelines.
For our forthcoming Wee Hours, we gather around a shared affection for Spain, shaped by recent travels and time spent there. It is a place where food is part of daily life, where people come together over simple things, and where meals are given the time they need.

Each ticket includes the full menu, with your choice of Port Sonic, Vermut, or sparkling tea. The evening begins at 8pm and continues until midnight, with last orders at 11pm. Food and drinks are served at the bar, and seating is open.
Wee Hours remains as an invitation to try, to share, to stay awhile. We welcome you to spend the evening with us and experience the space in a new light amidst an exciting new layout.
